So I finally did it…I started my own blog. I think it was a combination of being inspired by Julie & Julia, reading other great blogs, and having nothing else of magnificent importance to do. For those of you that don’t know, I just graduated from the University of Georgia! Exciting, huh!!? The world at my feet, endless possibilities, I get a fresh new start, I can go anywhere and be anything…right? Yes. One would think. Unfortunately, the harsh reality of a lulling economy and the necessity of a Masters or Doctorate to do anything in the 21st century is sinking in really quick. My plan? I thought was sticking to “the plan,” MY plan to be exact. Graduate, work for 6 months, save up a little ‘moolah’ and start Georgia State in June for a Masters in School Counseling. The problem you ask? My head…or my heart, one of the two can’t seem to decide what it actually wants. The good news: I am confident God has a plan for me. So in the mean time…I am (quasi-patiently) enjoying my spare time: self-learned lessons in the kitchen (caramelized apples gone array), photowalks (that you will have the pleasure of enjoying as soon as I post some pics), lots of quality time with Mr. Billy Blanks (he’s the Tae Bo king for those of you that don’t know), and of course study/quiet time with the Big King himself…I’m reading Isaiah right now.

Although last night I did take a detour from Isaiah when I was reminded of an always good passage to chew on by a friend. Matthew 6:25-27: “Therefore I tell you do not worry about your life, what you will eat or drink; or about your body, what you will wear. Is not life more important than food and the body more important than clothes? Look at the birds of the air; they do not stow or reap or store away in barns, and yet your heavenly Father feeds them. Are you not much more valuable than they? Who of you by worrying can ADD a single hour to his life?”
It’s almost comical because that is such a simple question, so simple in fact a measly “no one” would suffice. So it’s simple right…God says ‘don’t worry, it will do you no good’ yet do I simply listen? I try. So at present I am working on not worrying. Also I am working on bettering myself in the kitchen. I love to bake, strongly dislike to cook. So I am perfecting my baking skills…no need to branch out, right?
Currently known among my family and friends as the “cupcake queen” yesterday I ventured into cheesecake! Today: caramelized apple topping! This was an Emeril recipe labelled “intermediate” difficulty…I figured it was a healthy challenge.
The Directions: Mix 1/4 cup water and 1/2 cup sugar in medium sauce pan, bring to a boil, then lower temp and cook until sugar is dissolved. Continue cooking until an amber color, 7-10 minutes. Then add one stick butter, on low heat stir until melted. Add apples, cook for 5 minutes.
  • Attempt #1: No amber color, cooked too long=hard rock candy, tasty but not for cheesecake. If I had thrown some cotton candy flavoring and pink dye in it would have been perfect. Wrong treat.
  • Attempt #2: Watched clock carefully, 8.5 minutes exactly, added butter AND apples…tasted like butter…bleh!
  • Attempt #3/Finale: Determined that my cooking intuition would serve me well I waited until I felt it was time to add the butter…nice consistency and flavor, no amber color.

Where I went wrong, I don’t know. Emeril…I’m coming for you. Or just to call you for some advice. Any secret hints I should know about let me know, please!

This is my first post…so I’m sending it out into the void, hoping someone will find it and enjoy. On to tomorrow for Callie and I’s (I don’t consider proper grammar a blog necessity) newly created ‘Foto Friday!’ Yippee!
